Old Fashioned Rice Pudding

2 1/2 cups cooked rice
1 1/2 cups evaporated milk (or scalded milk)
2/3 cup brown, or white, sugar
3 tbsp. soft butter
2 tsp. vanilla
1/2 - 1 tsp. nutmeg
3 eggs, beaten
1/2 to 1 cup raisins

Mix together all ingredients. Pour into lightly greased slow cooker.

Cover and cook on High 2 hours, or on Low 4-6 hours. Stir after first hour.

Serve warm or cold.

Makes 6 servings.

I used one of my 1.5 quart slow cookers for this recipe.

As you can tell from the image, the end result that I obtained certainly wasn't what I expected. I think that I didn't measure the fluids properly, but I double check everything before adding to the pot/bowl, but it was clearly dried out and there was some burning in the insert.

Curiously, I tasted what I had, and short of the 'pudding' part of it, I'd rank the taste as one of the better rice puddings that I've made.

Going to have to make this one again, but I have other rice recipes to try, so it won't be soon.
