Vegetable Beef Soup

1 lb. ground beef, browned and drained
2 cups tomato juice
2 cups beef broth
1 lb. frozen mixed vegetables, or your choice of vegetables


Combine all ingredients in slow cooker.

Cover. Cook on High 3 hours, and then on Low 3-4 hours.

Makes 4-5 servings.
Jim's Comments:

I used a 2.5 quart slow cooker for this recipe.

Tasted great.

Four ingredients.

Got on my 'Favorite' list really quick.

I took some pains to vary the vegetables that I used, just to avoid this recipe becoming a 'look-alike' to other soups that I make.

The only other comment that I would have is that the cooking cycle seems to be fairly long so you have to ensure that your lid fits properly and you're not losing a lot of steam from the pot.
