Barbecue Pork Chops
8 pork chops
1 cup (or more) barbecue, or sweet-sour, sauce
Brush each pork chop generously with sauce, then place in slow cooker.
Cover. Cook on Low 7 - 8 hours.
Makes 8 servings.
I only had four thinly sliced chops, so that was the limit to what I made.
I made them in a 1 1/2 quart slow cooker.
The pork was tender, and as you can see from the photo, it basically fell apart getting it out of the slow cooker, and it was tender enough to pull it apart with your fork. We both had the sensation that parts of the pork were extremely tender, but the next mouthful, the pork was tougher. Kind of hard to describe, but it would be a sensation that I would want in pulled pork, not pork chops.
Altogether, not a bad recipe. But next time I think I'll use a thicker cut, and I'll try the Sweet & Sour sauce.
