Parmesan Scalloped Potatoes

5 Red potatoes; sliced, (about 5 cups sliced) (up to 6)
6 sl Turkey bacon or other smoked meat
3 oz Freshly grated parmesan cheese
1 cn Condensed cream of mushroom soup
Salt and pepper to taste

Layer all ingredients in lightly buttered 3 1/2-quart slow cooker (or use a soufflé dish to fit in a larger slow cooker); cover and cook on low for 7 to 9 hours. Adjust seasonings. Serves 4.
