Roulades of Beef

2 md Onions; chopped
1/2 c Celery & leaves; finely chop
1 ts Salt
1/8 ts Pepper
1/2 ts Dried thyme; crushed
2 tb Oil or shortening
1 c Fine dry bread crumbs
1 3 lb flank steak
1 c Tomato sauce, beef stock, or
Red wine


Sauté onions and celery with seasoning in hot fat for 3 minutes. Add bread crumbs. Mix well. Pound flank steak with mallet to flatten. Spread stuffing on meat. Roll meat lengthwise and tie securely in 4 places. Place in cooker. Add tomato sauce, beef stock, or wine. Cover and cook on LOW for 8 to 10 hours.
