4 cups old-fashioned rolled oats
1/2 cup honey or maple syrup
3 tbsp vegetable oil
Spray the inside of the slow cooker with cooking spray.
Put the rolled oats, honey, and vegetable oil in the slow cooker and mix well. Partially cover, propping the lid open with a twist of foil or a wooden skewer to allow the moisture to escape, and cook on Low for 2 1/2 to 3 1/2 hours, or until the oat morsels are roasted dry and golden brown, stirring every 30 minutes.
Allow the granola to cool, then transfer it to an airtight container. Store in the refridgerator.
Makes 5 servings.
The photo shows the granola with sweetened coconut, sliced almonds and raisins added.
I did this in a five quart slow cooker.
I don't normally do recipes in a slow cooker that require this much attention, but I've been meaning to do this forever, so I went ahead and did it.
Turned out o.k., and I'd make this again.
While not huge healthy food people, we like a nice mix of yogurt and granola for dessert and breakfasts.
