Beef Broccoli Soup

1 1/2 pounds lean ground beef
3 cup chopped broccoli
2 cans mushroom pieces - (4 oz ea) (or 1 cup chopped fresh mushrooms)
1/2 cup chopped celery
1 cup sliced carrots
1/4 cup chopped green pepper
1 quart tomato juice or V-8
1/2 cup water
1/4 teaspoon salt - (to 1/2 tspn)
1/4 teaspoon freshly-ground black pepper
1/4 teaspoon thyme
1/4 teaspoon oregano

Brown beef; drain off fat. Add vegetables, juice, water, seasonings. Place in slow cooker, cook on LOW 8 to 9 hours. Freezes well.

This recipe yields 6 servings.

Broccoli: Broccoli is a member of the cabbage family and is almost one of those 'Wonder Foods' as it has a high vitamin C content along with a lot of dietary fiber. Broccoli has a lot of large word ingredients in it and a lot of other word ingredients that I don't understand. My take away on it is that broccoli is good for you. Although a lot of the good stuff is removed if you boil broccoli to prepare it. (See Mom? Not everything needs to be boiled.) If you don't have any broccoli on hand, then you've got a problem. I'd suggest that the closest substitute would be cauliflower.
