Italian Sausage Soup

1 1/2 pounds sweet Italian link sausage -- cut 1 inch thick
2 cloves garlic -- minced
2 medium onions -- chopped
1 28 oz can whole tomatoes -- mashed
2 14 oz cans beef broth
1 teaspoon leaf basil
1/2 teaspoon leaf oregano
1 tablespoon chopped parsley
1 medium green bell pepper -- seeded and chopped
2 zucchini -- thinly sliced
2 cups water
grated Parmesan cheese


In skillet, brown sausage; drain well. Add all ingredients except Parmesan cheese to slow cooker; stir well. Cover and cook on low setting for 12 to 14 hours. Taste for seasoning; serve sprinkled with cheese.
