2 10 oz. packages frozen broccoli spears, thawed and cut in pieces
10 3/4 oz. can 98 % fat-free cream of celery soup
1 1/2 cups reduced-fat cheddar cheese, divided
1/4 cup yellow onions, finely chopped
1 cup baked potato chips, crushed
Combine broccoli, soup, 1 cup cheese, and onions in slow cooker sprayed with non-fat cooking spray.
Cover. Cook on low 3 - 4 hours or on high 2 hours, or until broccoli is done to your liking.
Mix remaining 1/2 cup cheese and crushed potato chips together and sprinkle on top of casserole 30 minutes before end of cooking time. Leave cooker uncovered during this final half hour of cooking.
Makes 4 servings.
O.k. So I did a lot of substitution for this recipe. I used fresh broccoli and just did enough for two servings. I used 'regular' no name celery soup. I used regular medium cheese. I skipped the baked potato chips because 'somebody' hit my 'Do Not Eat' shelf and there wasn't any left. (I thought there was a second bag, but I was wrong.)
Because I only did a small amount of broccoli, I used a 1 1/2 quart slow cooker.
Turned out nice. I got positive remarks for the recipe.
I would make this recipe again.
