Nine Bean Soup
2 c. bean mix
2 ham hocks or pieces of ham
1 lg. chopped onion
1-2 cloves minced garlic
1/2 - 1 tsp. salt
2 (28 oz.) cans tomatoes
1 tsp. chili powder
Juice of a lemon
Pepper to taste
Soak and wash 2 cup bean mix. Soak overnight. Add 2 tablespoons salt to water. Drain beans and add 2 quarts water, 2 ham hocks or ham pieces, 1 large chopped onion, garlic and salt. Cover and bring to boil. Reduce heat and simmer 1 1/2 hours. Add tomatoes, chili powder, lemon juice and pepper. Simmer 1/2 to 1 hour. Makes 4 quarts. In slow cooker, cook 3 hours on high and 5 hours on low.
