Fish Fillets Florentine
4 fresh or frozen flounder fillets, or other fish fillets (1 1/2 lbs. )
1 10 oz. pkg. frozen chopped spinach
1 3. oz. pkg. cream cheese, softened
1 tbsp. lemon juice
1 tbsp. instant minced onion
1 11 oz. can condensed Cheddar cheese soup
Thaw frozen fillets. Cook spinach according to pkg. directions; drain. Combine spinach, cream cheese, lemon juice, and onion' mix well. Spread about 1/4 of the spinach mixture on each fillet. Roll up; secure with wooden pick. Spoon soup into slow cooker. Place fish on 12x12-inch piece of cheesecloth. Bring edges over fish; tie securely. Place in cooker. Cover; cook on low for 4 hrs. Carefully lift cheesecloth bag from cooker. Transfer fish to serving platter; remove picks. Stir sauce; pour some over fish rolls. Sprinkle with nutmeg. Pass with remaining sauce.
