Breakfast Apple Cobbler
8 medium apples, cored, peeled, sliced
1/2 cup sugar
dash of cinnamon
juice of 1 lemon
1/4 cup (1/2 stick) butter, melted
2 cups granola
Combine ingredients in slow cooker.
Cover. Cook on Low 7 - 9 hours (while you sleep!), or on High 2 - 3 hours (after you're up in the morning).
Makes 6 - 8 servings.
I only made half of the recipe.
Because I only made half the recipe, I used my Oatmeal Slow Cooker and it pretty well filled the cooker. If you make a whole recipe, you should probably use a 3 quart size cooker.
I used homemade granola.
The recipe turned out nice. The granola really complemented the apple, but I thought it was a bit on the dry side. For some reason, something possessed me and I added a scoop of ice cream, which made the recipe go from 'nice' to 'fantastic'. And no, I don't have a problem with ice cream for breakfast. We have ice cream at cub scout camps with our special french toast so the precedent has been set.
I'll make this again. I'll also make it for a dessert.
