Cranberry Ginger Pork Roast
4 pound bone-in pork loin roast
1 cup fresh or frozen cranberries -- coarsely chopped
1/4 cup Atkins Sugar Free Pancake Syrup
1 canned chipotle en adobo -- chopped
2 teaspoons grated fresh ginger
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
In a small bowl mix cranberries, syrup, chipotle, ginger, salt and pepper. Place roast in slow cooker; rub with mixture. Cover and cook on low 8 to 10 hours.
This recipe yields 6 servings.
