Beef Pot Roast
3 pounds rump or chuck roast - (to 4 lbs)
1 teaspoon salt
1/4 teaspoon freshly-ground black pepper
3 medium potatoes - (to 4) -- quartered
3 carrots - (to 4) -- cut into 2" pieces
2 medium onions -- halved
1/2 cup water or beef broth
Sprinkle roast with salt and pepper. Place half of vegetables in bottom of slow cooker, top with roast, then add remaining vegetables and liquid. Cover and cook on (Low) for 8 hours or (High) 5 hours.
Makes 6 to 8 servings.
