Corned Beef and Cabbage

12 pearl onions, peeled
3 carrots, trimmed and peeled
2 1/2 pound corned beef brisket, cut into 3 crosswise pieces
1/2 medium cabbage, cut into wedges


Place onions and carrots in slow cooker. Place corned beef on top of vegetables. Add enough water to cover meat.

Cook on high setting 1 hour. Then, either cook 10-12 hours on low setting or 5-6 hours on high. Cabbage wedges may be added on top of beef 3 hours before completion of cooking time.

Yield: 6 servings
