Braised Flank Steak

1-1/2 - 2 lb flank steak
1 T oil
1 T flour
1 medium onion, minced
1 medium carrot, minced
1 green pepper, minced
1 T tomato paste
1 can condensed beef broth

Rub meat with flour and brown in oil in a heavy skillet. Remove meat and place in slow cooker. Add vegetables to skillet and sauté for about 5 minutes. Add remaining ingredients and bring to boil. Pour vegetable mixture over steak.

Cook in slow cooker on high heat for 4-6 hours, or low heat for 8-10 hours.

Remove meat from pot and slice into thin strips across the grain. Spoon vegetables and sauce over meat and serve. To make a "gravy, " after cooking, pour the vegetables and liquid into a food processor and process until smooth. Makes 6-8 Servings.
