Irish Corned Beef in Beer
6 potatoes, pared and quartered
3 medium onions, quartered
1 small cabbage, cut in wedges
1 cup thinly sliced carrots
1 3-4 lb corned beef brisket
1 cup of beer
Place vegetables in bottom of slow cooker. Trim fat from corned beef; place meat on top of vegetables. Pour beer over all. Cover and cook on low-heat setting for 9 to 11 hours, or until done. Serves 6
