Meatloaf with Tomato Sauce

1 (1 lb. ) can whole stewed tomatoes
1 garlic clove
2 Tbsp. chopped parsley
1 egg
1 tsp. salt
1 lb. ground turkey burger or ground beef
1 c. soda cracker crumbs


This is cooked in a pan to fit inside a slow cooker. Preheat slow cooker at #5. In mixing bowl place tomatoes, garlic, parsley, egg and salt; beat with electric mixer until smooth (can be done in a blender). Combine meat with cracker crumbs and 1 1/4 cups of tomato mixture. Shape into loaf and place in loaf pan. Pour remaining tomato mixture over it and place in slow cooker. Cover and bake at #5 setting for two hours. Hint: Meat loaf and sauce may be placed in pot without pan. Bake at #3 1/2 for 2 hours.
