Sauerbraten Style Short Ribs
2-2 1/2 pounds beef short ribs
1/2 cup red wine
1 lemon sliced
1 onion sliced
10 whole cloves
1 tablespoon pickling spices
1/2 cup water
12 gingersnaps crumbled
Place ribs in a large ceramic or glass bowl. In a small bowl, combine wine, lemon, onion, peppercorns, cloves, pickling spices and water. Pour over short ribs. Cover and refrigerate overnight, turning ribs at least once during marinating. Place marinated ribs in a 3 1/2 quart slow cooker. Pour marinade over ribs. cover and cook on LOW about 8 hours or until ribs are tender. Remove ribs and keep warm. Strain juices and return to slow cooker. Turn control to HIGH. Stir in gingersnaps. Cover and cook on HIGH about 15 minutes or until thickened. Spoon sauce over ribs. Makes about 6 servings.
