Bacon Onion Chip Dip

6 slices bacon -- finely chopped
8 ounces light cream cheese -- softened
1 cup light sour cream
1/2 cup shredded cheddar cheese
2 green onions -- finely chopped
potato chips or crackers


In a nonstick skillet over medium-high heat, cook bacon 7 to 8 minutes or until crisp. Transfer to a paper towel-lined plate to drain. Cover and cook on high for 1 hour or until cheese is melted (do not stir). Reduce heat to low until ready to serve.

Transfer to a bowl and serve with plain potato chips or as a spread on crackers. Dip will keep well in the refrigerator for several days.
