1 to 1 1/2 lbs ground beef
2-3 (16oz) cans kidney beans, drained and rinsed
1 can "Ro-Tel" diced tomatoes with "Hot" green chilies, undrained
2 cans (14 1/2 oz) diced tomatoes, undrained
2 (8 oz) cans tomato sauce
1 medium onion, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 Tbsp chili powder
1 tsp salt, optional
1/2 tsp pepper
shredded cheddar cheese (optional)

Brown beef, drain. Transfer to slow cooker. Add remaining ingredients, except cheese.

Cook on low 8-10 hours or on high 4 hours. Garnish individual servings with cheese and chopped onions. (Great served with cornbread)
