Clam Chowder

1 c Chopped onion
1 c Chopped celery
2 c Chopped potatoes
2 cn Minced clams
1 tb Apple cider vinegar
3/4 c Butter/margarine
3/4 c Flour
1 qt Half and half
Salt and pepper

Pour clam juice and vinegar over vegetables, add water just to cover. Simmer 30 minutes. Melt butter, blend in flour, cook 1 minute, then add half and half. Cook until smooth and thick. Add 1/2 ts salt and pepper to taste. Last add vegetables and clams, cook in slow cooker at least 1 hour until flavor is through.
