Bigos

1 onion -- chopped
1 garlic clove -- minced
2 tablespoons butter
1 pound cabbage
1 quart sauerkraut -- rinsed, drained
1/2 pound mushrooms -- sliced
1 pound boneless pork butt -- cut in 1" cubes
1 pound boneless veal -- cut in 1" cubes
1/2 pound Polish sausage -- sliced 1/2" thick
1/2 cup beef stock
1 cup chopped tomatoes
2 tart apples -- diced
1/2 cup pitted prunes
1 bay leaf
1 teaspoon salt
1/2 teaspoon freshly-ground black pepper
1/2 cup red wine


Combine all ingredients in slow cooker and cook on LOW 8 to 10 hours.
