Brunch Casserole

1 pound lean ground beef
1/2 pound ground breakfast sausage
1 onion, chopped
2 tablespoons butter
2 cloves garlic, minced
1 can sliced mushrooms
1 teaspoon salt, or to taste
1/2 teaspoon nutmeg
1 package (10oz) frozen spinach thawed and squeezed dry
3 tablespoons flour
6 eggs, beaten
3/4 cup milk, scalded
1/2 cup shredded cheddar cheese


In a skillet, lightly brown meats and onion in butter; drain excess fat and place meat mixture in a well-greased slow cooker. Stir in garlic, mushrooms, salt, nutmeg, spinach, and flour. Beat eggs and milk together; pour over meat mixture. Stir well, ; cover and cook on low for 7 to 9 hours, or until firm. Sprinkle with shredded cheese 5 minutes before serving. Serves 6.
