Beef and Barley Soup

1 pound stew beef -- cut in 1/2" cubes
1 medium onion -- chopped
2 stalks celery -- chopped
2 carrots -- diced
3/4 cup barley
1 bay leaf
1 teaspoon salt -- or to taste
pepper to taste
6 cups beef stock


Place all ingredients in a slow cooker. Cook on low for 6 to 8 hours, stirring occasionally.
