Chilli con Carne
500 g mince meat
1 onion, chopped
1 medium capsicum, chopped
3 tsp ground cumin
1 tsp Mexican chilli blend
1 cup beef stock
2 tbs tomato paste
1 can chopped tomatoes
1 can corn kernels, drained and rinsed
1 can red kidney beans, drained and rinsed
1 can butter beans, drained and rinsed
Cook the onion over medium heat, add the mince - breaking it up. Add the spices. When meat has browned, add the tomato paste and chopped tomatoes. Stir through.
Throw the beans and beef stock into the slow cooker, add the mince mixture.
Cover and cook on High for 1.5 hours, then low for 3 hours or on auto for 6-7 hours.
