2 pounds stew beef pieces
Salt -- to taste
Freshly-ground black pepper -- to taste
1 pound small white onions (or use canned/jarred onions)
1 pound potatoes -- peeled, quartered
5 celery ribs -- cut 1" pieces
6 carrots - (to 8) -- chunked (or equivalent in baby carrots)
1 large can tomatoes -- liquid reserved
5 tablespoons tapioca
1 tablespoon brown sugar
1 bay leaf
2 teaspoons kitchen bouquet
Season meat with salt and pepper. Place in slow cooker. Add vegetables. Mix tapioca, sugar, tomato liquid, and kitchen bouquet. Pour over stew. Mix a little bit. Add bay leaf. Cook on Low 10 to 12 hours or on HIGH 5 to 6 hours.
Let sit a little bit before serving - it will thicken a little.
