Green Vegetable Ragout
3 tablespoons butter
1 large onion -- sliced
1 seedless cucumber -- sliced
3/4 pound zucchini -- sliced
1 green pepper -- seeded, and cut in strips
1/2 cup apple cider
Salt -- to taste
Freshly-ground black pepper -- to taste
Melt butter in pan, add onion and cook until soft. Add remaining vegetables and cook for 5 minutes without browning. Stir in cider and season well. Turn into slow cooker and cook on LOW for 5 to 7 hours. Check seasoning before serving with roast lamb or pork.
