Chinese Pie

1 to 1 1/2 pounds ground beef
3/4 cup diced bell pepper (green AND red if possible)
3/4 cup diced onion
1 package (dry) brown gravy (or use mushroom or onion)
4 to 6 medium red or round white potatoes, diced (about 4 cups)
2 tablespoons butter, melted
1 (15 oz) can whole kernel corn, drained (or 2 cups frozen)
1 (15 oz) can creamed corn
salt and pepper to taste


Brown ground beef with diced peppers and onion. Drain well. Place ground beef mixture in slow cooker; sprinkle gravy mix over ground beef mixture. Toss diced potato with melted butter to coat and add to slow cooker; add whole kernel corn and creamed corn. Salt and pepper to taste. Cover and cook on low for 7 to 9 hours. Taste and adjust seasonings.

Serves 4 to 6.
