Sun-dried Tomato Spaghetti Sauce

1 1/2 cups chopped sun-dried tomatoes
1 medium onion -- chopped
1 cup chopped celery
2 garlic cloves -- minced
1 can whole or chopped tomatoes - (36 oz) -- undrained
2/3 cup Chablis or other dry white wine
1 teaspoon dried fennel seed
1 1/2 teaspoons basil
1/2 teaspoon oregano
1/2 teaspoon freshly-ground black pepper
Salt -- to taste


Place all ingredients in slow cooker and cook on LOW for 6 to 8 hours.

Comments: You can add mushrooms, if desired.
