Sweet and Sour Apricot Sauce

6 cups pitted chopped apricots
1 cup light raisins
2 cups brown sugar
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
2 teaspoons salt
1/4 teaspoon cayenne -- optional
2 large onions -- chopped
4 cloves garlic -- minced
24 ounces Japanese preserved ginger
1 1/2 cups cider vinegar

Place apricots, raisins, brown sugar, cinnamon, cloves, allspice, salt and cayenne, if desired in the slow cooker and set on low. In a food processor or blender, puree onions, garlic, and vinegar until smooth. Add onion mixture to slow cooker and stir. Cook 3-4 hours, stirring occasionally, until mixture is thick like ketchup. Taste and adjust seasonings. Store in refrigerator until ready to use or process in sterilized jars to heat seal.
