Italian Pork Chops

4-8 lean pork chops, 1 inch thick
1 tbs light olive oil
1 medium onion chopped fine
1/2 lb sliced mushrooms
1 clove garlic minced
1 8 oz. can of pureed tomatoes
1 8 oz can of tomato sauce
1/4 tsp salt
1 tbs parsley
1/2 tsp oregano, basil, and black pepper
2 med green, yellow, or red peppers cut into wedges
1/4 cup dry sherry (optional)


In medium skillet, heat oil and brown pork chops on both sides. Place mushrooms, garlic, and onion in bottom of slow cooker. Top with pork chops.

Mix tomatoes, tomato sauce and spices in a bowl and pour over chops. Cover and cook on low for 7 hours. Before serving turn on high and place peppers on top. Cover and cook, an additional 30 minutes. Serve immediately over rice or pasta.
