Apple Harvest Pudding
2 cups all-purpose flour
1/2 cup packed brown sugar
2 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/3 cup shortening
2 slightly beaten eggs
2/3 cup milk
3 small apples, peeled, cored, and chopped (2 cups)
Fluffy Hard Sauce (below)
Stir together, flour, sugar, baking powder, cinnamon, salt and nutmeg. Cut in shortening until crumbly. Combine eggs and milk; add to dry ingredients, stirring just until moistened. Fold in apples. Turn into a well greased 2 lb. coffee can with waxed paper lining the bottom. Cover tightly with foil. Place can in slow cooker. Add 1 cup warm water to cooker. Cover; cook on HIGH for 4-4 1/2 hrs. Remove from cooker. Cool 10 min. . ; unmold. Serve warm with Fluffy Hard Sauce.
Fluffy Hard Sauce.
Cream 2 cups sifted powdered sugar and 1/2 cup butter. Beat in 1 egg yolk and 1 tsp. vanilla. Fold in 1 stiffly beaten egg white.
