Ground Turkey Vegetable Round
1 1/2 lbs. uncooked ground turkey
1 cup soft bread crumbs
1/3 cup pine nuts, toasted
2 eggs. slightly beaten
1/4 cup chopped green onions
1 tbsp. Dijon mustard
1 tsp. prepared Horseradish
1 tbsp. Worcestershire sauce
1/2 tsp. salt
1/8 tsp. pepper
1 med. zucchini
1 carrot, peeled
In a large bowl, combine turkey, bread crumbs, pine nuts, eggs, onions, mustard, horseradish, Worcestershire sauce, slat and pepper. In a food processor, shred zucchini and carrot. Stir vegetables into turkey mixture. Shape into a 6" ball. Place a metal rack in slow cooker. Place turkey round on 16" double thickness of cheesecloth. Gently lift into cooker and place on rack. Fold cheesecloth over meat. Cover and cook on low about 4 1/2 hrs. Lift out meat with ends of cheesecloth. Cut into 6-8 wedges. Spoon drippings over top.
