Beef Stew

1 to 1/2 pounds stew beef, cut into bite-sized pieces
4 to 5 potatoes, peeled and cut into bite-sized pieces
1 or 2 carrots, peeled and sliced
6 to 8 cups beef broth
minced onion, to taste
3 T. corn starch (optional)
3 T. water (optional)

Place stew meat, potatoes, carrots, beef broth and minced onion in slow cooker. Cook on low about 7-8 hours. For a thick gravy, mix corn starch with the water and add to the stew about 1/2 hour before serving.
