3/4 pound breakfast turkey sausage links cut into thirds
12 dried yellow or red tomato halves coarsely chopped
3-4 shallots peeled and chopped
1 small jicama peeled and julienned
1 4 ounce can chopped green chilies drained
1/4 teaspoon ground cumin
1/4 teaspoon ground chili powder
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 15 ounce can cannellini beans drained
1 14 1/2 ounce can fat free chicken broth
2 ounces reduced fat mozzarella cheese shredded
Combine all ingredients except cheese in a 3 1/2 quart slow cooker. Cover and cook on LOW 4 1/2 to 5 hours or until tomatoes are tender. Ladle into individual bowls and sprinkle each serving with mozzarella cheese. Makes 6-7 servings.
