2 lb Stew beef, cut in 1 inch cubes
5 md Carrots cut in 1 inch pieces
1 lg Onion cut in chunks
3 Stalks of celery, sliced
2 cn Beef broth (undiluted)
3/4 c Quick cooking tapioca
2 Bay leaves
-salt and pepper to taste
5 md Potatoes
To be added last 30 minutes right before serving 5 medium. Potatoes peeled and cut in 1 inch cubes Cooked until just done and add to stew
Trim all fat from meat. Put all ingredients (except potatoes) in slow cooker. Mix thoroughly. Cover and cook on low for 12 hours. or HIGH 5-6 hours.
Add cooked potatoes, stir with cooked stew, and let sit for about 30 minutes for flavor to merge.
Serves 6 - 8
