4 6-ounce skinless chicken breast halves
8 1/2 cups water
2 cups chopped onion
2 cups chopped carrot
2 cups chopped celery
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
4 chicken bouillon cubes
3/4 cup uncooked pearl barley
Place first 10 ingredients in a 4 1/2- to 5-quart slow cooker. Cover and cook on high setting 5 hours. Add barley to slow cooker; cover and cook 1 additional hour or until barley is tender. Remove chicken from slow cooker. Bone and shred chicken; return to slow cooker, stirring well. Cover and cook until chicken is thoroughly heated.
