1 packet ground beef substitute (skip if you can't get it)
2 cups cooked beans, any kind or a mixture (or a can - 2 cans if no burger sub)
1 medium onion, diced and sauté
1 28 oz. can diced tomatoes
6 cups water
2 TBSP veggie broth powder
4 carrots, sliced
3 sticks celery, sliced
handful of shredded cabbage if you have it
1-2 potatoes, diced
1 bay leaf
1/2 tsp. thyme
salt and pepper to taste
1/4 cup barley or rice
Toss everything into the slow cooker and cook on Auto all day or high 'til the veggies are cooked.
