Sausage Dinner

1 medium onion -- sliced
1 large cabbage -- cored & wedged
1 pound new potatoes -- cut up if large OR 4 potatoes -- cut into eighths
4 large carrots -- peeled & cut in 1"
1 package lower-fat kielbasa -- cut 1 inch thick
2/3 cup hard apple cider, beer or apple juice
1/3 cup apple cider vinegar
1/4 cup light brown sugar
1/4 cup coarse mustard

Layer in slow cooker in order: onions, cabbage, potatoes, carrots and sausage. Mix together hard cider, vinegar, brown sugar and mustard and pour over sausage. Cover and cook on low for 4 to 6 hours, until veggies are tender. Serve with rye bread and mustard.
