Pear Anise Puree

4 large, ripe, flavorful Comice or Anjou pears, halved, cored, and cut into 1-inch chunks
1/4 cup anisette or Poire William
Finely grated zest and strained juice of 1 lemon
1 cup granulated sugar

Place all ingredients in slow cooker. Cover and cook on high for at least 4 hours, or until pears are soft. Cool slightly. Using a slotted spoon, transfer pears to a blender or food processor. Blend or pulse for 10 to 15 seconds, or just until the pears are mushy. With the blender or processor running, slowly pour in enough of the cooking liquid to make a thick puree. Store the rest of the cooking liquid for other uses, such as drizzling over fresh fruit or sorbet.

Yield: 5 cups.
