Czech Beef Stew with Gherkins

4 slices bacon, cut in 1" lengths
2-1/2 to 3 lbs. lean stew meat
salt and pepper
8 oz. mushrooms, quartered
1 large onion, sliced
1 Tbsp. paprika
1/2 cup dry red wine (burgundy is good)
1 can beef broth
1 small jar gherkins, cut in half
hot cooked rice

Fry bacon and remove. Salt and pepper stew meat and brown in bacon drippings. Set aside. Sauté onion and mushrooms in drippings, adding 1 Tbsp. oil if necessary. Combine all ingredients except gherkins, bacon and rice in slow cooker and cook for 4 hours on high or 6 hrs. on low. Stir in some flour mixed with water to thicken juice if necessary. Stir in pickles and bacon. Serve over hot rice. Makes 4 - 6 servings.
