Barbecue Sauce

2 Tbsp. butter
1 medium onion, sliced
1 clove garlic
1/2 c. chopped celery
3/4 c. water
1 c. ketchup
2 Tbsp. lemon juice
2 Tbsp. Worcestershire sauce
2 Tbsp. brown sugar
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. vinegar

Melt butter. Add onion and cook until browned; add remaining ingredients and cook 20 minutes. Makes about 2 1/2 cups or enough for 3 pounds of meat.

Suggestion for slow cooker cooking: Brown 3 pounds short ribs. Place in slow cooker and cover with barbecue rib sauce. Cook on low for 6 to 8 hours.
