Chili with Black Beans

3/4 cup black beans
1 lb. beef stew meat or ground beef
1/4 cup bacon grease or use vegetable oil
1/4 cup onion
1/4 cup green peppers
1/2 cup diced green chilies
3 Tbsp. tomato paste
4 cups beef broth
1/4 tsp. ground cumin
1 tsp. minced garlic or to taste
1/2 tsp. salt and pepper
1 cup Monterey Jack OR cheddar

Brown the beef in the bacon grease or vegetable oil until brown. Add everything except the cheese to a slow cooker. Cook in slow cooker for 6 hours. Serve the chili with a sprinkle of cheese over each portion. Can also serve over rice.
