Down Home Rhubarb

2 lbs. fresh rhubarb (about 7-8 cups)
1/2 cup water
1 1/2 cups sugar
1/2 tsp. vanilla (optional)


Trim rhubarb and cut into 1" pcs. Combine with water and sugar in slow cooker. Cover and cook on LOW 2-3 hrs. Add vanilla, if desired. Chill.
