Easy Sauerkraut

4 slices bacon -- diced (optional)
1 can sauerkraut -- (1 lb, 11 oz)
1 head cabbage -- chopped
1 large onion -- diced
1 tablespoon butter
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper


In small skillet, cook bacon, saving drippings. In slow cooker, combine sauerkraut, cabbage, onion, butter, sugar, salt and pepper. Pour cooked bacon and drippings over all. Cover and cook on LOW for 3 to 5 hours.
