Colcannon Mashed Potatoes

10 Yukon Gold Potatoes (about 3 lbs/1.5 kg)
4 cups chopped green cabbage
1 1/2 tsp each salt and pepper
2/3 cup hot milk
1/4 cup butter, softened
1 green onion, chopped

Peel and slice potatoes; place in slow cooker. Add cabbage and 1/2 tsp each of the salt and pepper. Cover with water. Cover and cook on low until vegetables are softened, about 6 hours. Drain and return vegetables to slow cooker.

With potato masher, mash vegetables until no large pieces remain. Stir in milk, butter and remaining salt and pepper; mash until desired smoothness. Sprinkle with green onion.
Jim's Comments:

I used about half of the potatoes called for, and about half of the green cabbage.

Actually turned out o.k. I don't usually use a potato masher (I use a potato ricer), so I had a hard time with this part. I actually used a pastry cutter and that turned out a bit of alright.

The recipe is different. Cabbage flavored potatoes. Of course, they disappeared as soon as I put them on the table.

I'll make this again.
