Fresh Fruit Compote

2 c Water
1 c Sugar
1/4 ts Salt
5 c Fresh Fruit; peeled, halved, or quartered
1/4 Lemon Rind
1/2 ts Vanilla


Place all the ingredients except the vanilla in the slow cooker, cover, and cook on Low for 5 to 7 hours. Remove the cover, stir in the vanilla, and then chill the fruit. Makes 6 to 8 servings.
