Cranberry Orange Relish

1 pkg (12oz) fresh cranberries, rinsed and picked over
1/4 cup thawed frozen orange juice concentrate
1 cup packed light brown sugar
2 Tb raspberry or cider vinegar
1/2 cup chopped dried apricots
1/2 cup golden raisins
1/2 cup chopped walnuts


In 3 1/2 qt slow cooker, mix together the cranberries, orange juice concentrate, brown sugar, and vinegar.

Cover and cook on LOW about 3 hours, or until cranberry skins pop. Turn off heat.

Stir in apricots, raisins, and walnuts. Cool, then transfer to a covered container and refrigerate. Makes about 3 cups.
