1 pound beef shank
1 14 1/2 ounce tomatoes
3 stalks celery
3 cups water
3 beef bouillon cubes
1 teaspoon salt
1 (10 oz. ) pig frozen mixed vegetables
Put the 3 cups water, bouillon cubes, salt and mashed tomatoes in slow cooker. Turn the slow cooker on so the cubes will begin to dissolve.
Meanwhile, cut up vegetables. Put meat into the pot with vegetables on top. Frozen package of vegetables goes in during last half of cooking time. Stir couple times during cooking time. Cook 12 hours on low (4 hours on high).
When the soup is done, remove shank from pot. Remove meat from bone, cutting it into small pieces and return to pot. Stir meat into soup and serve. Serves 4-6.
